Might be a stupid question, but I really don't know if this can be done.
My MIDI Controller is a Graphite M25.
Hooks up with Orion with on problem, but when I press keys on the controller, the volume of the instrument in focus is very quiet.
I have to hit the keys really quite hard for it to register at a sensible volume.
Is there any settings / method I can do change the sensitivity (without having to crank my main volume up!)

You did not mention if this happens with all instruments/plugins. Is it new or always been this way? AS Christophe wrote, check for vel curves in your controllers settings or controller software (if there is one). If you can't find/use it i think there are midi "filter" plugins the must be at least one that changes velocity messages to max value.
