A little addition: sometimes, not very often, there must be some strange information (err...) in sf2 files - I have a sample CD called "early patches", and an instrument in that is played back 1 octave higher (in all 3 variations of the sf2) than it is played in Kontakt or sfz.
Solution in that case wasn't too hard if you got something like Awave studio (a lovely tool, I got it) or the mentioned extreme sample converter. I just extracted the few wavs, loaded them into our sampler and set the right notes.
Awave studio, by the way, can load osp files, which is nice. But it can't save to osp, so you have to save, like grymmjack said, in for example sf2 and load it in the sampler.
